AGAVE DELI LEMON PIE:
For a rich base: 30g coconut oil, plus extra for greasing, 100g peeled almonds & 100gr of dates
For the topping: 300g cashew nuts, 2 ½ tbsp of IIDEA´S agave syrup. 50g coconut oil, 150ml almond milk & 2 lemons, zested and juiced.
Leave the cashews soaking in boiling water for 1 hr. Meanwhile, blend with a pinch of salt all the ingredients in your food processor.
Grease a 23cm tart tin with coconut oil, Pour the mix as the base of your pie and let it rest in the fridge to set for 30 min. (aprox.)
Blend all the remaining ingredients with the food processor, until smooth. Spoon onto the base and put in the fridge to set completely (about 2 hrs). Just before serving, scatter over more lemon zest.
